As the first blossoms of spring awaken the air, Admiral Lord McAllister calls forth his guests to a banquet unlike any other. In the spirit of old seafaring traditions and noble feasts, he invites you to gather at his long table, where ocean treasures meet the bounty of the land.
The evening begins with freshly shucked Tasmanian oysters, dressed three ways, a nod to the Admiral’s voyages across distant shores. From there, the journey unfolds—delicate cold starters of Morton Bay bug, scallops, and cured barramundi crowned with caviar. A steaming bowl of lobster and spinach soup arrives next, as comforting as a sailor’s tale by the fire.
Hot from the galley, lobster frittis and truffle crab claw cakes make their entrance, preparing the way for the banquet’s heart: Australian Wagyu MB6+, T-Bone steak, Cajun-spiced chicken, crispy pork belly, squid balls, garden salad, and crisp accompaniments, each dish a chapter in a story of bold flavours and refined craft.
To close, a sweet epilogue—strawberry cheesecake cocktail—both indulgent and refreshing, raising a toast to new seasons, new journeys, and new companions met around the table.
